Final stable 1.0 release

Final supported version for 1.0.x (Fourier based PSFs) before moving to 1.1.x (E2E PSFs). The readthedocs will be updated as well, so for legacy docs you can use the "version" menu in readthedocs to find the v1.0.3 docs.

Initial Release

• Fourier-psf based simulations,
• Aligned with Monty et al MNRAS publication.
