Releases that increment `appVersion` but not a helm chart's actual `version` lead to non-reproducible and inconsistent charts

Commits like this mean that the helm chart version 2024.2.3 pulled before this commit and after this commit will give me different results.

This means that having a chart pinned to a version like 2024.2.3 like many people will do in GitOps will lead to potentially random and unintended upgrades/changes to the environment.

Please consider updating the chart's version with every release instead so that installations from this repo are reproducible 🙂
