Exclude directories from backups

Describe your core improvement

It would be incredibly useful to be able to configure directories to be excluded from automated backups.

Current limitations

It’s currently only possible to include/exclude the share and media directories in their entirety, and isn’t possible to exclude subdirectories.

Technical benefits

Allows optimisation of backup size by only backing up necessary directories.

Additional context

One example (which spurred me to open this discussion) is that it’s not currently possible to exclude Ollama models from being backed up when using the Ollama addon. This results in immutable models being backed up which is a waste of a lot of disk space.

I use Immich and having its data being stored in the share folder prevents me from backing up the rest of my data such as documents in Paperless, etc
