Allow granular control of enabled tools to provide better context management for Users

Right now I find myself using Archon mostly for its Knowledge Base capabilities.

This means I have a bunch of tools (task and project related) that I am not using and are just eating my context window.

Adding a DISABLE_TOOLS or ENABLE_TOOLS env var (or in-app setting) would be an easy win for user QoL, in my humble opinion.

I tried disabling Project+Task functionalities, but as far as I can tell the tools are still being broadcast by the MCP server and they still eat my context window.
